Bnai Brith, and • Metropolitan Detroit Chapter of
Hadassah saw Bond subscriptions totaling nearly
$600,000. Shown in the top photograph, at the Einstein
dinner honoring Irving Guttman, are from left, stand-

and Sam Freedman. Seated are Linda Apfelblat,

Kedem Lists Shavuot Recipes

NEW YORK — Kedem
Wines has compiled several
recipes for Shavuot. Kedem
wines are suited for cooking
and drinking with light
spring and summer menus.

Souffle Fondue

1 halla sliced and trimmed
2 sticks butter or margarine
8 oz. Swiss cheese grated
3 eggs
1 1/2 cups milk
1/2 cup Kedem Chablis
1 /4 tsp. dry mustard
1 /2 tsp. salt
Grease 9x12 cake pan and
melt remaining margarine or
butter. Fit one layer of halla on
bottom of cake pan and
sprinkle with half of grated
cheese. Repeat with second
layer.
Mix remaining ingredients
except melted butter. Pour
over cheese and halla, then
drizzle melted butter or mar-
garine across top. Cover and
chill overnight. Bake 1 hour
and 15 minutes at 350 degrees
until firm and golden. Serve
hot.

2 lbs. fillet of sole
1 cup of Kedem Le Blanc de
Blancs
1 cup yogurt or sour cream or
half of each
2 h cup grated cheese (kosher
parmigiana or finely grated
Swiss allowed to dry over-
night)
4 tsp. chives
1 /2 tsps. Worcestershire sauce
Ye tsp. thyme
1 /4 tsp. seasoned salt
4 tsps. corn flakes or bread
crumbs
paprika
parsley
Marinate fish in 1/2 cup of
Kedem Le Blanc de Blancs 1
hour, turning every 15 min-
utes. Pour off wine into mixing
bowl. Pat fish dry and place in
shallow 2-quart baking dish.
Mix wine, yogurt or sour

cream, cheese, chives, Wor-
cestershire sauce, thyme and
-salt. Stir in wine and spread
over fish.
Bake at 450 degrees approx-
imately 10-12 minutes. Do not
overcook. Sprinkle with pap-
rika and parsley. Serves 6-8.
Serve with Kedem Chateau
Augey, a dry, white Bordeaux.

6 large juice oranges, peeled
3 /4 cup sugar
1 cup water
1 cup Kedem Burgundy
Royale
1 stick cinnamon
2 cloves
2 slices lemon
2 slices lime
cheesecloth
Dissolve sugar in water and
add Kedem Burgundy Royale.
Tie cloves, cinnamon and
lemon in cheesecloth and
cook at low boil in wine mix-
ture until syrupy. Remove
cheesecloth and discard.
Leaving oranges whole, re-
move white outer membrane
and slice oranges horizontally.
Add to cooked syrup and chill
until cold. Serves 6-8. Serve
with Kedem Matuk Royale
Rouge, a • naturally sweet, full
bodied dessert wine.
