Kedem Offers
Holiday Recipes

Kedem Wine Co. is greet-
ing the Jewish New Year by
introducing low calorie
gourmet recipes using
kosher wines. Among the
recipes are:

EGGPLANT
APPETIZER
21/2 lbs. eggplant
2 tbsps. capers
4 ribs celery

1 large onion sliced
6 oz. can tomato paste
4 oz. can tomato sauce
4 tsps. sugar substitute
1 /2 cup Kedem Burgundy Wine
1 /2 cup plain white vinegar
1/2 cup green olives
salt
epper
Wash and dice eggplant
without peeling. Sprinkle with
salt and let drain in colander,
45 minutes. Slice celery and
onion. Combine eggplant, cel-
ery, onion, tomato paste, to-
mato sauce, sugar substitute,
vinegar and wine in large pot
with lid. Cook covered on low
flame stirring occassionally,
approximately 2 to 21/2 hours.
Stir in capers, olives and pep-
per. Cook another 1 /2 hour or till
liquid is mostly reduced. Chill,
serve cold on lettuce or with
crackers. This dish also makes
an excellent hors d'oeuvre.
Serve with Kedem Seyval
Blanc.

BEEF BIRDS
IN WINE SAUCE
2 lbs. eye of rib roast beef
sliced very thin
2 large carrots
4 ribs celery
1 large green pepper
2 cups chicken broth
1 /2 lb. mushrooms
1 clove garlic finely chopped
3 tbsps. parsley chopped
1 large onion
salt and pepper
1/2 cup Kedem Vin Rose
Slice roast beef as thinly as
possible. Grind vegetables or
chop very fine. Combine veg-
etables with salt, pepper and
garlic and moisten with 1/4 cup
of chicken broth. Spoon small
amount of vegetable mix on
each beef slice, and place
seam down in baking dish. Mix
wine with chicken stock, pour
over beef birds and bake for
one hour or until just done.
Serve with Kedem Chateau Le
Pin Bordeaux. (Serves 6-8.)

SAVORY CARROTS
2 lbs. carrots
1 orange
1-11/2 cups Kedem Honey
Royal Wine
1 /2 tsp. cinnamon
1 /2 cup orange juice
3 tbsps. honey (optional in
case you prefer a sweeter
flavor)
Peel carrots and cut into
2-inch lengths. Cut orange in
quarters and slice quarters as
thinly as possible. Combine
remaining ingredients and
pour over carrots and oranges
in deep baking dish. Bake in
350 degree oven stirring occa-
sionally, until most of the liq-
uid is cooked out and carrots
are tender. Serves 6-8.

HOLIDAY
APPLE CRISP
6 large red Delicious apples
1/4 cup Kedem Royale Wine
1 tbsp. lemon juice
cinnamon
large bowl of water
Add lemon juice to water.
Halve, core, peel and slice
apples into half-moon shapes
and soak them in the water.
Combine remaining ingre-
dients. Drain apples, place in
deep baking dish, add com-
bined ingredients, stir lightly
and bake until apples are
crisp-tender. Serve with
Kedem Amaretto.
