Joseph Callene, better
known to many as Monsieur
Joseph, whose gourmet ta-
lents in tableside cooking
are not too readily equaled,
is Duglass' very excellent
choice as maitre d'.
Although there was no
tableside cooking this eve-
ning, a set menu prepared
by Duglass, you may be cer-
tain that with Monsier
Joseph there • flambe'd
cuisine will be a big thing.
The former Mama Zel-
da's site is probably one
of the most unlikely
places to find a French
gourmet restaurant .
but then again, at not too
many will you find butter
wrapped in tin foil,
either.
Dinner this evening con-
sisted of warm cream of
pumpkin and apple soup,
delicate and delicious ..
Weingut De Burklin-Wolf
Reisling 1977 white wine
. Baked Potato La La, a
Duglass original, as are so
many of his dishes . . . with
a large shrimp or cray fish
over it . . stuffed with lobs-
ter, crab and shrimp laced
with cognac and swimming
on -a creamed shrimp and
lobster sauce . . . Cuvee
Vercherre red French table
wine . . . Entree was Filet of
Quail and Duglass' version
of Beef Wellington . . . the
tender meat very prime .. .
although we're most certain
his usual Beef Wellington
casing is not apart from the
meat. Cremont De Bour-
gogne -1979 white wine .. .
As is the style in Europe,
salad after the entree .. .
Duglass' presentation with
pure goat's cheese and a de-
licate olive oil dressing .. .
Only thing spectacular
about the dessert was when
five strawberry cheese
tortes were brought out and
taken back to the kitchen
after being shown about the
room with a flaming cup on
top of each one . . . The slices
of cake were served and the
staff introduced . . . In his
charming manner, Duglass
Duglass spoke and an-
swered questions at what
must have been a most
happy moment for him ..
knowing that the next night .
his big dream would finally
come true .. . Chef Duglass
was now also a re-
staurateur. .
Restaurant Duglass is
open daily from 11:30 until
3 for lunch . . . Reservations
are suggested for dinner ..
5:30 to 10 on Monday and
Tuesday ... till 11 Wednes-
day and Th
ursday . . . til
midnight Friday and
