Elchanan Theological

will be guest speaker.
The event will precede
the May 18 anniversary
dinner to be held 6 p.m. at
Cong. Shaarey Zedek.

Gordon will be honored. The
dinner will conclude a
month-long campaign to
benefit the university. The
campaign is chaired by Dr.
Leon Fill and co-chaired by

114 cup button mushrooms
2 tbsps. lemon juice
2 cup cottage cheese
2 cup sour cream
onion salt, to taste
paprika, to taste
4 egg whites
2 tbsps. butter
V2 cup matza meal
1/3 cup slivered almonds
Preheat oven to 375 de-
grees. Slice mushrooms and
sprinkle with lemon juice.
Mash cottage cheese and mix
with half the sour cream. Add
mushrooms and lemon rind.
Season to taste with onion salt
and paprika and mix well. Beat
the egg whites until very stiff
and fold into the cheese and
mushroom mixture. Using half
the butter, grease a souffle
dish, pour mixture into it,
sprinkle with matzo meal; dot
with remaining butter, scatter-
ing it over the top In tiny
pieces. Bake In oven for 45 to
50 minutes.
Whisk the remaining sour
cream. Spread over the top of
the cheese and mushroom
souffle, spike with slivered al-
monds, sprinkle with a little
paprika to add color, put beak
in the oven for 10 minutes, and
serve at once. Serves 6.
