2 cups flour
1/2 cup raisins
1 teaspoon baking soda
1 teaspoon cinnamon
1 /2 teaspoon nutmeg
1/2 teaspoon ginger

Peel, core, and slice apples;

set aside. In a large bowl, mix
sugar, oil, eggs, vanilla, and
almond extract; beat well. Stir
in flour, raisins, baking soda,
cinnamon, nutmeg, and ginger;
mix well. Stir in apples. Pour
batter into an ungreased 9 x
13-inch pan. Sprinkle additional
cinnamon on top, if desired.
Bake in a 350°F. oven for 50
minutes, or until top springs
back when touched lightly.
