1 package dry yeast
1/2 tsp. sugar
Vs cup lukewarm water
% • cup liquid non-dairy coffee crea-
mer, scalded
2 tbsps. pareve margarine
1 tsp salt
2 1/2 cups flour (added in two stages)
yellow cornmeal
Dissolve yeast and sugar in luke-
warm water, stirring until dissolved.
Set aside for a few minutes. Add mar-
garine and salt to the scalded milk.
When the milk is lukewarm, add.the
yeast mixture and 2 cups of flour. Mix
until smooth. Cover and let rise in a
warm place for one hour. Knead in the
remaining_ 1/2 cup of flour, kneading
until smooth. Cover and let rise until
dough is doubled.
Roll dough into 1/2 -inch thickness
and cut into circles of about 2 'h
inches. Dip all surfaces in yellow corn-
meal and let rise on a lightly greased
baking pan for 45-60 minutes. Place
in preheated 400-degree oven and
bake until top is lightly browned. Turn
over and bake until other side is
lightly browned. Serve immediately or
freeze and toast when ready to use.
(They split apart in the middle just like
store-bought English muffins.)
