2 quarts water
1 meaty bone, lean and well
trimmed
1 tbsp. salt
cup tomato sauce; or 1 cup
chopped fresh tomato
1 h cup chopped carrots
1 cup finely shredded cabbage or
chopped watercress
lh cup chopped onion
2 tbsps. minced parsley
Wash kidney beans and soak
overnight in water. Add bone and
salt. Boil until beans are tender
and meat well done, adding more
water if necessary. Put in vege-
tables and cook until done. Ad-
just consistency if desired by add-
ing more water. Remove bone.
Serve hot. YIELD: about 2 quarts,
8 servings.
