We have a
Wonderful Business

Sirkis

We are looking eagerly toward
.the holiday on which our Torah was
given—Shavuot. It is said that our
ancestors were in a great hurry
to go to Mt. Sinai to receive the
Torah. They didn't have enough
time to properly prepare the meat
dishes—so they served dairy food
instead. Since then we enjoy the
most delicious "Milechik" (dairy)
dishes on Shavuot. Milk, cream,
butter and cheeses are the main
ingredients used. Here you will
find a kosher pizza that utilizes
lots of cheese.

The Dough
11/2 cups flour
1 cake yeast
34 cup water
2 this. oil
1 tsp. salt
Sauce and Topping
2 large, ripe tomatoes
1/a cup salad oil
1 /2 pound hard cheese (cheddar type)
1 6-oz. can tomato paste
2 garlic cloves (mashed)
1 tsp. oregano
10 ripe olives
1 can of anchovies (fillet)
1. Combine the yeast in 34-cup luke
warm water. Leave it for about 15
minutes, then combine with the flour
and knead lightly. Add the oil and
knead more till you have a smooth
and elastic ball, (about 8 minutes.)
In a warm place let it rest and rise
in a large bowl.
2. After an hour, heat the oven to
450° F., and turn out on a dusted
surface and knead for about a minute.
Then, roll out with a rolling pin into
a 12-inch circle. Transfer it to a
greased baking sheet, or a special
round pizza-pan. Pinch the edges of
the dough so it will stand up slightly.
Brush the dough with oil.
3. Prepare the "goodies" that go on the
pizza while the dough is still resting.
Grate the cheese on a coarse grater.
Slice the tomato into thin slices. Mix
the tomato paste with the mashed
garlic, add 3 ibis. water, and a dash
of pepper and salt.
4. Put the tomato slices on the dough,
arranging them evenly. Sprinkle one-
half of the cheese over the tomatoes
--evenly. Spread the tomato sauce
all over, except the edges. Sprinkle
some more oil, then arrange the
anchovies and the olives symmetri-
cally so every eater will have his
share. Sprinkle on the rest of the
cheese.
5. Put in a 450° F. heated oven for
about 20 minutes. The pizza is ready
when the cheese is melted and the
dough looks nicely browned.
6. Serve while hot. You will have about
six to 10 servings.
