1. Dissolve the yeast in the water.
Add the flour and salt. Stir and then
knead lightly. Let the dough rise in
a warm place, for about an hour.
2. Knead the dough again. Divide
it into 8 equal pieces. Form small
balls and put them on floured wax-
paper. Let the balls rise again for
30 minutes.
3. Heat the oven to 500 for at least
15 minutes before you bake.

4. On another piece of wax-pape,
draw a circle 4 inches in diameter.
Flour the paper and roll each ball
to circle, using the drawing as a
guide.
5. Dust a cookie sheet. Put four
pito't on it. Put it in the middle
of the oven. Bake for about 3 min-
utes and then turn the pito't. They
should bake for another three min-
utes and looked puffed in the center.
The puffing separates the dough into
two layers. The color of the pita is
off-white with some spots of light
brown. Bake the other four.

SYRIAN BREAD—PITA
A reader from New Jersey has
asked for information about Syrian
bread. We thought it might be of
general interest, so we share it
with you: Syrian bread is a round,
flat bread, composed of two layers
that form a pocket. The bread is
soft, it is used and liked in the
Middle East and in Israel as well.
It is called Pita. (Pat means
bread, in Hebrew). One of its com-
mon uses is to hold the falafel
(small patties made of chickpeas).
The Pita is also cut off to small
pieces and dipped in sauces or
dips. Pita (S y r i a n bread) was
traditionally baked very primitive.

Today, it is made in modern bak-
eries. You, too, could bake Pita
in your own kitchen, using pro-
cessed flour and baking it in a
modern oven.
