Inner parts of the animal are less
expensive than steaks. They have
full nutritional value and delicious
flavor when prepared the right
way. Jewish cookery is a treasury
of recipes for parts like liver,
tongue, melt, kishka, etc. The rea-
son is simple: Jews couldn't always
afford the expensive cuts so they
settled for the cheaper ones. To
compensate they put some "ne-
shome" (heart and soul) in the pre-
paration, and the results were won-
derful.
We suggest here a melt stew. The
melt is a favorite when made into
a pocket and stuffed. The stuffing
business may discourage you be-
cause of the work and calories in-
volved. So try the following easy
and tasty recipe.
2 cloves garlic
s tsp. cumin seed
11/2 tsp. salt
1 tsp. pepper
1/2 cup flour
2 pounds melt
2 big onions
2 Tbls. oil
2 cups beef stock
(from a can or
cube)
1. Chop the onions and fry lightly in a
pan with the oil.
2. Meantime, cut up the melt into one
inch cubes, put the flour on a flat
large plate, and roll the melt cube in
the flour.
3. Add the melt cubes to the pan and
fry together for about five minutes.
Transfer everything to a pot.
4. Add garlic, salt, pepper, cumin seed
and beef stock. Bring to a boil and
then cover and reduce heat.

5. Cook for about 90 minutes on medi-
um-low heat. Stir occasionally adding
some liquids, if needed. Serve it with
rice. You will have four servings.

WASHINGTON (JTA) — Some
30 members of the 171st military
police battalion of the District of
Columbia National Guard have set
up what may be the first kosher
mess hall in the history of the
U.S. armed forces.
The facility, in an interfaith
chapel, was obtained through the
efforts of the battalion commander,
Maj. Robert Donlon. and Capt.
Walter Gummelt. battalion chap-
lain, who is a Baptist minister
Maj. Donlon said, "We're happy to
be able to do something for our
Jewish troops because we often
have to train on their Sabbath."
The soldiers said they will con-
tribute their own money to buy
kosher food. One is 2nd Lt. Robert
Atkins, a Negro who converted to
Judaism. Spec. 4th class Neil Seid-
man volunteered to cook for the
mess. The observant guardsmen
will take their lunch and dinner
there but will breakfast in the
regular mess hall.

science from Brandeis University
in June. He has been a legislative
intern for the late Senator Robert

W. Brooke, and will attend Colum-
bia Law School.
