Squash originated in America.
It was a common crop along with
the pumpkin of the American In-
dian. Select squash that is heavy
for its size and free from blem-
ishes. Summer squash is best
when young.

2 tablespoons butter
salt and pepper to taste

cut off ends, slice 1/2-inch thick. Steam,
covered with 2 tablespoons butter, salt

Steamed Squash
3 young tender summer squash
2 tablespoons butter
1 teaspoon salt
s teaspoon pepper
Do not peel young tender squash.
Cut off ends. Cut into slices or cubes
steam covered in butter. Add salt and
pepper. Cook 10 minutes. Variation:
Place squash in small amount of boil-
ing water. Cover and cook slowely 15
minutes. Uncover and boil rapidly to
hot water evaporate and mash.
