Jeivish Meals

Following are pies which are
very refreshing in these hot August
days. The fresh blueberries are
now in season.

Deep Dish Blueberry Pie
Pastry:
Double recipe above but do not bake.
Put 1.X of dough in greased 9-inch pie
plate.
Blueberry Pie:
1 qt. fresh blueberries
4 tablespoons flour
a., cup sugar
1-x teaspoon cinnamon
Wash berries and pick them over to
remove stems. Add flour, sugar and cin-
namon. Cover with other half of pastry:,
prick pastry and bake in 450 degree
oven until nice and brown.
Chilled Pineapple Pie
Pastry for a 9-inch pie:
I cup flour
vegetable shortening
: i cup
iz teaspoon salt
3 to 4 tablespoons ice water
Sift flour with salt, blend in the
shortening with pastry blender or 2

knives, leaving shortening in lumps the
size of .large peas. Add just enough ice'
water to make dough stay together. Roll
out dough very thin in circular shape
to fit pan. Place in greased pan very
loosely to avoid stretching. Leave half I
an inch of pastry beyond rim of pan
and build up fluted edge. Prick pastry
thoroughly with a fork to prevent puff-
ing. Chill pastry before baking. Bake
about 10 minuets in 450 degree oven. I
Pineapple Pie:
4 egg yolks
1 X cup sugar
teaspoon salt
1 can crushed pineapple
1 tablespoon lemon juice
1 teaspoon grated lemon rind
4 tablespoons pineapple Kole! about
• :: cup boling hot pineapple juice
Crushed pineapple for top
• Meringue:
4 egg whites
1 , teaspoon cream tartar
cup sugar

Beat egg yolks slightly and add the
sugar. salt, crushed pineapple drained.
lemon juice and grated lemon rind.
Cook in double boiler. stirring occasion-
illy, until custard coats a spoon i about
15 minutes). Add drained pineapple
hot juice to jelly ponder to dissolve.
Stir well. Blend this gelatin mixture
into the custard. Cool. Make a very stiff
meringue by gradually beating the
cream of tartar and sugar into the stiff-
ly beaten egg whites. While the pine-
apple custard is still soft and smooth.
fold in tahe meringue and pile in cool
baked pie shell. Cover top with wrll-
drained bits of crushed pineapple and
chill well before serving.
Note: Use lemon kojel if pineapple
kojel is unobtainable and use no lemon

juice.
