Jewish Meals
By ROSALIND S. ZUNSER
(Copyright, 1967, JTA, Inc.)
The common expression often
heard about "making a big tzimes"
out of a thing or event pays un-
witting tribute to a dish that in
the past was served as a mere side
dish. The Yiddish origin of the
word tzimes is "tzum essen ' (to
be served with the meal). Now
the resourceful housewife even
makes a main dish out of this
vitamin-rich and luscious vege-
table.
Today's suggestion is apple and
carrot tzimes. If used with broiled
hamburger it will make a balanced
and filling repast.
APPLE AND CARROT rzimEs
3 tablespoons shortening
1 tablespoon brown sugar
'.1 .) cup grated apples
2 raw carrots grated
1 :) teaspoon salt
1 ; tablespoon medium barley
cup water
Combine ingredients in a pot, rover
and cook over low heat about two hours
until barley is soft. Add more water if
necessary.
HAMBURGERS—BROILED OR FRIED
1 pound chuck ground
1 egg yolk
1 slice parve white bread
1 small onion, grated
Salt and pepper to taste
1 tablespoon ketchup
Soak bread in cold water. Squeeze
out most of the water. Add rest of in-
gredients. mix well. Make patties and
broil well done or medium rare or fry
by heating pan well, greasing pan a
little, add patties and fry well done or
medium rare.

Voice of Music
"What could speech accomplish,
when everything had just been
said by music? After its great
voice, only the deaf, those who
have felt nothing, heard nothing,
are eaten by the desire to speak."
