per to taste.

Fish and Potato Kugel
2 lbs. cooked or smoked fish
2 tablespoons butter
1 large onion, minced

Heat butter in. skillet. When bubbling
add onions and celery. Saute over low
heat until onions translucent. In but-
tered baking dish, arrange alternate
layers of potatoes, fish, onions and
celery, start and finish with potatoes.
Salt and pepper layers of potatoes.
Pour over top egg yolks mixed with 1
cup sour cream or white sauce. Bake
in preheated 350 degree oven until
firm and top Is golden brown, about 40
minutes.
White Sauce: 1 cup milk, 2 table-
spoons butter, 2 tablespoons flour, 1 :i
teaspoon salt. Melt butter in skillet,
when bubbly add flour, mix well, - and
gradually add milk and seasoning, stir-
ring constantly until mixture thickens.
Variation: Add layers of sauerkraut
on top of fish.
