Jewish Meals

Chances are that it is a long time
since you served your family
"Stuffed Miltz," a delectable, nu-
tritious and thoroughly Jewish
dish, much in vogue in the "Old
Country." It has been largely by-
passed in favor of more Ameri-
canized dishes. It has the added
virtue of being economical. Served
with Chick Pea salad, it can make
a pleasing and wholesome repast.
Cooked Chick Peas without any
trimmings stands out in my child-
hood memory. Mother used to place
it on the table garnished with a

little salt on a Saturday late after-
noon. Neighbors and friends would
sit around the table in the gather-
ing gloom and munch chick peas
until the first star appeared on
the horizon. Off went the chick
peas, on came the wine and the
spice box for it was "Gut Woch"
and an end to the Sabbath.
Roast Stuffed Miltz (Spleen)
1 beef miltz
11/2 cups bread crumbs
1/2 teaspoon salt
V2 teaspoon pepper
1 /2 teaspoon paprika
1 onion, minced
2 tablespoons rendered fat
1 onion, diced
1 large carrot, diced
