Katz's 'The Things
That Are Caesar's'

What is there about the lowly
herring that had made it such a
favorite in our grandmother's day
— a love that has extended to our
own generation? For one thing its
availability and also its cheapness.
When the art of preserving herring
in brine was developed, probably
in Holland, some 400 years ago, it
was a boon to the remote shtetl far
from a river or lake. The varieties
in which it can be prepared are a
tribute to grandmother's resource-
fulness. It can be smoked, pickled,
chopped, baked, fried and mari-
nated, The types of herring are
legion — shmaltz, matjes, railch,
Bismark, etc. In popular folk hu-
mor the herring was synonymous
with a Litvak, and many a joke
was perpetrated at the poor Lit-
vak's expense which the victim
could safely disdain as long as
he had his herring.

Chopped Herring
3 shmaltz herrings
1 large onion
1 large apple
3 hard cooked eggs
3 tablespoons cider vinegar
1 roll or 2 slices white bread
11/2 teaspoons sugar
Soak herring in cold water overnight
after washing herrings thoroughly. Next
day drain, remove skin and bones.

chop all very fine and smooth. Garnish
with yolk of egg sieved (hard cooked)
on top and chopped hard cooked white

For wine chopped herring add 33 cup
prepared wine herring to above recipe
(chopping wine herring well) and soft-
en bread in wine sauce instead of vine-
gar. Garnish with hard cooked egg as
above.
Pickled Herring
3 herrings (milt)
milt from herrings
2 onions
1 cup vinegar
1/4 cup water
2 bay leaves
5 peppercorns
2 tablespoons sugar
1 lemon sliced thin
14 cup sour cream (optional)
Clean herrings tnoroughly. reserving
milt, soak herrings overnight in cold
water; next day slice herrings in two-

Gets Agency Aid

BROOKLYN—In recognition of
the great need to provide deaf
Jewish children with a Jewish edu-
cation, the Tora education and cul-
tural department of the Jewish
Agency presented the Yeshiva In-
stitute for the Hard of Hearing
and Deaf with a grant for the
purchase of much needed audio
equipment.
The Yeshiva Institute, located in
Brooklyn is providing a Jewish
and secula
r education to children
with a hearing deficiency. By pro-
viding specialized teachers using
special audio equipment in small
classrooms these children are
emerging from their world of
silence.

inch slices, slice onions very thin, bring
vinegar. water. peppercorns and bay
leaves to a boil, cool to lukewarm,
mash milt with sugar. Put slices of her-
ring in jar alternating them with slices
of onion and lemon, combine mashed
niilt and sour cream with lukewarm
vinegar, water and spices and pour over
herring. Cover and let stand 1 day be-
fore serving. May be kept in refrigera-
tor one week.
Herrings in Casserole
1 lb. potatoes boiled in jackets,
when cool, peal and slice
1 shmaltz herring washed thor-
oughly and soaked overnight,
sour cream
pepper
butter
breadcrumbs
Alternate potatoes and sliced herring
in buttered casserole, adding pepper if
desired, pour sour cream over top and
sprinkle with crumbs. Bake in 375-de-
gree oven until crumbs brown.
Variation: Roll sliced herring in
flour, beaten egg and then in bread-
crumbs. Fry golden and put in hot oven
topped with sour cream for a few min-
utes. May add sliced onion, fried until
translucent if desired. Serve with pota-

toes.
