cup parve margarine
1 cup sugar
1/4 teaspoon salt
1 cup sifted all-purpose flour
1/2 cup yellow corn meal
11/2 cups cook, dried apricots, well-
drained
teaspoon grated orange rind
12 cup liquid in which apricots
cooked
2 additional tablespoons flour
11/4 cups shredded coconut
1 egg white, slightly beaten
Cream the shortening with 1/4 cup
of the sugar and the salt until fluffy.
Work in the cup of flour and the corn
meal until thoroughly blended. Pat
evenly over the bottom of a greased
9-inch square baking dish, or pan.
Prick with a fork. Bake at 300°F. for
30 minutes. The base should not brown.
Meanwhile, drain the a p r i c o t s
thoroughly, measure, and mash until
almost smooth. Add the grated orange
rind and the 1/2 cup of apricot liquid.
In a small saucepan combine the re-
maining sugar with the 2 additional
tablespoons of flour. Add the apricots
and cook and stir over medium-low
heat for 20 minutes. Spread over the
prapared base. Combine the coconut
and egg white and spread evenly over
the apricots. Return to the oven and
continue baking at 300° F. about 35
minutes longer, until the coconut begins
to turn light brown. Cool and cut into
12 portions. The squares may be frozen.

Serve hot or cold, plain or with the
following hard sauce. This amount

be frozen.
HARD SAUCE: Stir 1/4 cup parve
margarine and 1 tablespoon boiling
water together until creamy. Gradually
work in 11/2 cups stifted confectioners'
sugar and 1/2 teaspoon vanilla. Form
into a neat mound and chill for sev-
eral hours. This amount makes about
1 cup.

5 medium-sized tart apples
1 81/2-oz. can crushed pineapple,
undrained
1 tablespoon lemon juice
3 ./'3 cup honey
11/2 cups finely crushed ginger snaps
1/2 cup dark brown sugar
1/2 teaspoon ground cinnamon
1/16 teaspoon salt
1/2 cup parve margarine
Quarter, peel, and core the apples.
Slice them very thin. Combine with
the undrained pineapple, the lemon
juice and honey, and pour into a
greased 6 x 8 x 2 inch baking dish.
Crush the gingersnaps in a blender
or grind them in a food grinder. Com-
bine with the brown sugar, cinnamon,
and salt. Cut in the margarine until
