LAMB SHANKS IN PEACH SAUCE
4 Wh o le lamb shanks
1 teaspoon each ground cinnamon,
paprika. and salt
1/4 teaspoon pepper
2 medium onions, finely diced
1 1-1b. 1-oz. can, sliced peaches
2 tablespoons parve margarine or
vegetable oil
Water to make 21/4 cups
2 tablespoons lemon juice
2 tablespoons lime juice
Remove all exces fat from the shanks.
Combine the cinnamon, paprika, salt
and pepper, and rub the mixture evenly
into the meat. In a 4-quart saucepan
over medium heat, brown the meat and
onions in the shortening. Drain the
peaches, and to the syrup add enough
water to make 21/4 cups. Add this liquid
to the lamb, cover the saucepan, and
simmer for 25 minutes. Add the peaches,
lemon juice, and lime juice. Canned
lime juice may be used if fresh is not
available. Continue to cook, covered,
until the meat is tender, about 1 hour
longer. Skim off the excess fat. Serve
one shank as a portion. The gravy is
delicious with either rice, mashed white
potatoes, or mashed sweet potatoes.
LAMB SHANKS CURRIED WITH RICE
5 whole lamb shanks.
21/2 tablespoons vegetable oil
cups canned apple juice
1 cup water
1 very large onion, minced
1 very large apple, minced
1 teaspoon salt
21/2 teaspoons curry powder
1/2 teaspoon ground ginger
1% cups rice, uncooked
Have the lamb shanks well-trimmed
and the breast portion removed. Brown
the meat slowly in the oil in a large
skillet or 2 medium-sized ones. When
they are evenly browned, pour off and
discard all the fat. To the meat add the
apple juice, water, onion, minced apple,
salt, curry powder, and ginger. Simmer
covered, about one hour, until the meat_
is very tender. Add the lemon juice.
While the meat is cooking, boil the rice
in rapidly boiling salted water until it
is tender but still firm, then drain thor-
oughly. When the meat is cooked, re-
move the shanks from the gravy and
keep hot. Add the rice to the gravy and
simmer 5 minutes. Place the rice on a
platter, and cover with the shanks. This
amount serves 5.
