RECIPE

cups sifted all-purpose flour
4 tablespoons sugar
tablespoons double-acting baking
powder
11 2 teaspoon salt
1 well-beaten egg
1/4 cup melted butter or margarine
1 cup milk
Sift the flour, sugar. baking powder,
and - salt together into mixing bowl.
Add the remaining ingedients and stir
only until moistened. Overmixing will
result in poor texture. The batter will
be slightly lumpy. Fill greased muffin
tins or tins lined with paper cups 3/4
full, and bake at 375 degs. F. about 25
to 30 minutes. until golden brown. Re-
move from the tins at once and serve
hot. This makes 9 large or 12 small
muffins. The recipe may be varied as
follows:
For Sweet Muffins. use 6 tablespoons
of sugar instead of 4. Two-thirds cup
of blueberries, cut-up dates or figs,
thoroughly drained crushed pineapple,
thoroughly drained cut pitted prunes,
or chopped apples may be added to the
batter. When the apples are used, sift
1/2 teaspoon ground cinnamon with the
dry ingredients.
For Corn Muffins. substitute 1 cup of
yellow cornmeal for 1 cup of the flour.
For Graham Muffins. substitute 13/4
cups graham flour for 1 cup of the all-
purpose flour. increase the milk to 1-
1 cups. and reduce the shortening to 2
tablespoons.
For Bran or Oatmeal Muffins, soak 1
cup of bran or quick-cooking oatmeal
in the milk for 5 minutes. Reduce the
flour to 1 cup.

1, 2
teaspoon salt
1 cup milk
1 cup peeled. finely diced apples
teaspoon ground cinnamon
4 teaspoons double acting baking
powder

and fluffy. Add the egg and beat until
thoroughly blended. Sift together the

flour, salt, and baking powder, and add
alternately to the batter with the milk.
Stir just enough to moisten. Stir in
the apples. Spoon into generously but-
tered small cupcake tins, filling them
about cup full. Combine the remain-
ing sugar with the cinnamon and
sprinkle evenly over the tops. Bake at
375 degs. F. 25 to 30 minutes, until
nicely browned. Remove from the pans
at once and serve hot. This makes 20

reduce the milk to 1/2 cup. In place of
the apples use 1 81/2 z. can. undrained,
of crushed pinea e. Add the pine-
