`Kosher Is Proper' Israeli Nosh
Falafel in 'Food Wonders of World

`Food Wonders of the World,'
the remarkably well compiled food
book for children, created for UNI-
CEF by the Kellogg Co., has a
brief section on Israel.
One of the fantastically attract-
ive illustrations is accompanied by
the cutline: "Religious Jews never
eat pork. Pork is not kosher
(meaning 'proper'), according to
Old Testament laws."
In the Israel section in this
book—text by Ruth Gelarie Fox,
illustration by Oldrich Holuber-
we read:
"The falafel is the favorite nosh
(snack) of Israel. It is a deep-
fried croquette made of chick peas,
chili peppers, eggs, flour and gar-
lic. Israeli boys and girls love
them. Falafel stands are every-
where.
"Most Israelis prefer lamb to
beef or veal. Religious Jews never
eat pork because pork is not kosher
. . according to Old Testament
laws.
"Among the most abundant veg-
etables in Israeli are eggplant,
olives and tomatoes. Popular fruits
include oranges, dates. figs. rais-
ins and pomegranates. Two favor-
ite dairy products are yogurt.

holent (a casserole of lima beans
with meats: and Lithuanian gefulite
fish (literally means stuffed fish,
but best described as boiled 'fish-
burgers').
"One of the popular breads in
Israel is •hallah, -an egg bread re-
sembling a loaf-sized, plaited roll.
Matzoh, a flat unleavened, cracker-
like bread. dates 'back to biblical
times."
While most of the items men-
tioned are used by Jews every-
where and are not necessarily
Israel, the over-all description of
the foods is interesting.
An historical background on the I
development of food products and
the foods of 39 countries are in-
cluded in this most interesting
children's book. There are pref-
atory statements by Mrs. Guido
Pantaleoni, Jr., president of UNI-
CEF. and Lyle C. Roll. president
of Kellogg Co., Battle Creek.

Branch 79 Gathering

"Ferdinand Lasal and Dr. Herz!"
will be the subject of a talk by
Aaron Kutnick at a meeting of
Branch 79. Farband, 9 p.m. Wed-
nesday at the Labor Zionist Insti-
tute.
The gathering also will be a
celebration of the 55th wedding
anniversary of the branch chair-
man, Louis Rosenberg, and Mrs.
Rosenberg.
Refreshments will be served.

PIROGEN
2 cups firmly packed ground cooked
lungen
1 cup ground cooked veal or chicken
1 teaspoon salt
i4 teaspoon pepper
1 small onion, minced
9.1 cup plus 3 tablespoons chicken or
goose fat
3 cups sifted all purpose flour
teaspoon baking powder
3 tablespoons cold water
3 tablespoons vinegar
1 egg,

In a mixing bowl combine the lungen
(lung), veal or chicken, teaspoon of
the salt. the pepper, and the egg. Cook
the onion in 3 tablespoons of the fat
until it begins to turn light brown.
Stir into the meat mixture. Into a sep-
arate bowl sift the flour, baking powder,
and remaining salt. Beat together until
blended the remaining'a
fat,
a the water and
vinegar. Add to the flour all at once
and stir quickly with a fork until the
mixture forms a ball. Between sheets
of waxed paper roll out a third of the
pastry at a time into squares ',43 inch
thick. Cut into 3-inch squares. Place
about a half-tablespoon of filling in the
center of each square, fold over into
triangles. and press the edges firmly to-
gether. Place on cookie tins. Prick th e
top of each pastry with a fork, and
bake at 400 degs. F. about 15 minutes,
until a rich light brown. Be careful
not to overbake as the crust will be -
come hard. Serve hot. This makes about
3 dozen.

Israel's Textile Exports
Israeli's textile exports, include
thread and yarn as well as cloth-
' ing, totaled $24,000,000 last year,
representing an increase of 15 per
cent over the years before.

CUCUMBER CUPS STUFFED
WITH SMOKED BACON
% inch cucumbers
2 cups boiling water
cup French dressing
Y., cup mild smoked salmon (lox)
1 hard cooked egg. riced
Grated rind of 1-'). lemon
Strained juice of
lemon
Pepper to taste
24 small sprigs of parsley
, Peel the cucumbers. then run the
prongs of a fork lengthwise over the
entire surface of each to form a ridged
edge. Cut each cucumber into 8 pieces.
With a small melon hall scoop care-
fully. remove parts of the seeds from
each piece to form a cup. Place the
cups in the boiling water for 1 minute,
drain thoroughly, then spoon the French
dressing over them. Mince the smoked
salmon, then mash fine. Add the egg,
rind and juice of the lemon, and pepper.
Fill the cucumber cups with the mixture
