That matzoh is the "poor
man's bread" is borne out by
the medical poet Abraham ibn
Ezra, who, in an account of a
visit to London in the 12th cen-
tury, writes that inmates of pris-
ons in England were given un-
leavened bread, "the bread of af-
fliction."
The Zohar, on the other hand,
has a different view of matzoh
which it calls "heavenly bread"
and declares that it is a symbol
of freedom and idealism. Mat-
zoh, according to the Zohar, was
to cure Israel and prepare the
people for the acceptance of the
Torah.
The elaborate procedures con-
nected with the preparation of
matzoh for Passover have always
been based on the requirement
that special care be exercised,
that the wheat not become
leavened either by rain swelling
the grains or by moistening of
the flour or by excessive knead-
ing or slow baking. Extensive
rabbinic literature exists with
detailed descriptions of these
requirements and the subject
has also been depicted in num-
erous paintings and engravings
dating back hundreds of years.
About the middle of the 19th
century, the invention of the
first matzoh making machine by
an Austrian Jewish baker pro-
mised to bring about profound
changes in the pre-Passover ac-
tivities familiar to most Jewish
families.
The characteristic feature of
all matzot is the pattern of per-
forations across the entire sur•
face. The purpose of the perfora-
tions is to ensure that in the
baking process, the heat will
penetrate the dough and keep it
from rising and swelling.
Although some authorities ob-
jected to the use of any shapes
in the perforation or of the mat-
zoh itself on the grounds that
such adornment might. prolong
the processing time and give rise
to leavening, Maimonides ruled
that any fancy design is per-
mitted if made by a professional
baker since he is able to work
rapidly.
Thus molds of various designs
are known to have existed for
use in making matzoh and de-
vices for making fancy perfora-
tions have been preserved. To-
day, however, although the mass-
production methods of matzoh
preparation are used by manu-
facturing firms in various parts
of the world, the simplicity of
shape is uniformly retained to
conform with the characteristic
of matzoh as "the bread of af-
fliction."
