TEL AVIV, (JTA)—A group
of about 600 immigrants from
Latin America, most of them
from Argentina, arrived in Is-
rael Sunday, and were trans-
ferred immediately to homes
prepared for them in various
parts of the country.
This is the second large group
of Latin American immigrants
to arrive here of late. A third
contingent is expected here
soon. Some of the newly arrived
settlers will go to Kochav, a
settlement begun by Latin
Americans in the Lachish re-
gion.
The current wave of Latin
American immigration has

Today's recipes are the sort
that turn laziness into a virtue—
deliberately planned for quick
and easy preparation, yet so de-
licious they can be served proud-
ly to the most particular guest.
The first is a gourmet's choice,
elegant and delicate Veal Scal-
lopini; the second a kosher ver-
sion of the Russian speciality
Beef Stroganoff. The Scallopini
is so quickly made it could be
prepared at the table in an elec-
tric skillet while the first course
was being eaten. The Stroganoff
is one of those recipes which
take almost as long to describe
as to prepare, so don't let the
length give the impression it is
complicated or time-consuming.
Read the directions carefully be-
fore starting, have everything
needed on hand, and by the time
the noodles are cooked, the meat
will be ready. Dairy sour cream,
which is one of the basic ingredi-
ents of the original version, is
here r e p l a c e d by a smooth
fleishig sauce so good it gives
the meat all the necessary rich-
ness.
The reason the Scallopini is so
quickly prepared is that the veal
is tenderized before it is cooked
by pounding or the process
known as cubing.
Since both these dishes must
be served as soon as they are
ready, don't start to cook them
until you are ready to eat. Better
to have your diners wait for a
few minutes than have these fine
dishes spoiled by standing.

the building destroyed by fire
in February of last year.
VEAL SCALLOPINI
1 1/2 lbs. prepared veal steaks
(See Introduction)
4 tablespoons all-purpose flour
3 /1 teaspoon salt
1 /3 teaspoon pepper
3 tablespoons parve margarine
or olive oil
1 ./2 cup white wine
1 teaspoon lemon juice
If your butcher has veal steaks al-
ready cubed, select 4 or 5 of them,
otherwise have him pound veal steak
as directed in the introduction.
Blend the flour, salt, and pepper.
Coat the steaks with this mixture,
using all the flour, Heat the oil or
margarine in a large frying pan over
medium heat. Add the meat, cook
on one side for three minutes, turn
over and cook three minutes longer.
Combine the wine and lemon juice
Lower the heat to simmer and pour
the wine over the steaks. Simmer
for three minutes and serve at once.
This amount makes 4 to 5 servings.
