Pillar Rock
Salmon Dishes
Pillar Rock salmon, noted for
its richness and color, is a treat
at lunch time in sandwiches and
salads. There are many hot dishes
you can make with Pillar Rock
salmon, too, which are special
dinner favorites. Here are three
of them.
SALMON SOUFFLE
1 lb. can Pillar Rock salmon.
1/2 cup bread crumbs.
1/2 cup milk.
yolks of 3 eggs.
whites of 3 eggs.
salt, cayenne, lemon juice.
Flake salmon. Add seasoning and
lemon juice. Soak bread crumbs in
milk 10 minutes and add salmon,
then add the yolks of 3 eggs beaten
until thick and lemon colored and
cut and fold in the whites beaten
stiff and dry. Turn into a buttered
baking dish and bake at 350 degrees
until firm. Serve with any desired
sauce. Serves 4-5.
SCALLOPED SALMON AU GRATIN
1 lb. can Pillar Rock salmon.
salt.
pepper.
1 cup cream sauce.
grated cheese.
paprika.
mashed potatoes.
Flake salmon, placing it in a deep
baking dish. Cover well with cream
sauce and season with salt and
pepper—sprinkle over this some
grated cheese and paprika, this
makes a nice golden brown top.
Bake for 10 minutes in a 400 degree
oven. A border of mashed potatoes
gives this a nice appearance.
Serves 4.
