tightly packed
4 tablespoons sugar
1 A teaspoon cinnamon
(or more to suit taste)
A dash of nutmeg
3 tablespoons fine cracker or dry
cake crumbs
(If using dried fruits like
prunes, pears, apricots, put
these through a food chopper
for best results)
2nd filling:
1 cup chopped seeded raisins
1 /2 cup chopped nuts (any kind)
1/2 cup fine crumbs
1 tablespoon grated oranr*e
1 tablespoon wine or fruit juice
3rd filling:
1 cup cherry, red raspberry or
strawberry preserves
1/2 cup fine crumbs
V2 cup finely chopped nuts of
any kind

Divide chilled pastry into
three parts. Roll out one part
into as thin a sheet as possi-
ble large enough to fit into a
7 1/2x11-inch baking pan, lightly
dusted with flour, bringing up
pastry along all four sides
about 1/4-inch. Spread Filling
No. 1. Roll out second ball of
pastry in the same way and
pierce with a fork. Arrange
over filling, bringing up sides
a little. Spread Filling No. 2.
Cover with the 3rd railed out
pastry dough, treated like the
2n1 pastry, then spread the 3rd

swirls or evenly. Bake in a
pre-heated oven 25 to 30 min-
utes at 425° F, or till crust
