There's nothing more wel-
come on a hot July day than
a tall glass of Beet Borscht,
topped with sourcream and a
mint leaf or two. Here is a
quick-easy recipe for making
a jarful to chill in your re-
frigerator and have on hand
as mid-afternoon cooler or
meal starter.
SUMMERTIME BORSCHT,
Basic Recipe
1 can small whole beets
Cold water as directed
below
1 medium size onion
1 /4 cup lemon juice or
vinegar (or citric acid
crystals to taste)
3 tablespoons dark brown
sugar
Sour cream for topping
Fresh mint leaves for
garnish
Pour liquid from can of
beets into a saucepan. Grate
beets and add enough cold
water to make 1 quart. Com-
bine with the beet liquid. Grate
onion and add, or leave onion
whole but cut into to permit
juice to flow during the cook-
ing and lift out before chilling
the Borscht. Now bring to a
boil, skim well and add lemon
juice, brown sugar and salt to
taste. Cook over moderate heat
for 5 minutes. Let cool then
chill in the refrigerator at least
2 hours before serving in tall
glasses, topped with sourcream
and garnished with mint. An
ice cube may be added per
glass too. Serves 6.
Variation 1: Combine grated
canned beets with 1 cup fine-
ly diced •rhubarb and add
enough sweetening and sour
agent to suit the taste. Cook
as above. It's a variation we
like immensely.
Variation 2: Add grated cu-
cumber uripared to the chilled
Borscht, allowing 1 cupful per
quart. Use minced parsley for
garnshing, with or without
sourcream.

Picnic Pick-ups that are easy
to pack along can be made on
short notice, if hubby and the
young fry should sound off
one of these sunny days in
July. Here are a few sugges-
tions:

PICNIC HUMPTY - DUMPTIES

2 eggs per portion
Hard cook eggs at a mild
bubble boil, in water to cover,
at least 10 minutes. Let cool.
With crayons draw faces on
each eggshell — don't have to
be an artist for that! — and
wrap them in wax paper sep-
arately or two together. Take
along a small jar of mayon-
naise for dipping shelled eggs
if desired. Good also unadorn-
ed and in the natural state.

Radishes, scallions, green
onions, etc.
Cut out core from stem end
of lettuce and make several
cuts from stem end to almost
outer surface. Wrap tightly in
foil. Take along grated cheese
in a small envelope or foil;
also have the dressing con-
tainer wrapped to prevent spil-
lage. Score the cucumber with
the serated end of your pota-
to peeler or a fork and slice
into thin rounds or ovals. Wrap
in foil till ready to serve at
the picnic. Stick cucumber
slices among the leaves Of let-
tuce and garnish further with
radishes, scallions, green on-
ions. Have the salt shaker
handy, too. Pass the. French
Dressing bottle or jar.

1 tall can evaporated milk
1 /4 cup lemon juice
1/2 cup sugar
1 6-ounce can frozen orange
concentrate
Chill evaporated milk in an
ice cube tray until soft crys-
tals form around the edge of
tray then whip stiff with a ro-
tary beater. Add lemon juice
and continue beating till very
stiff. Combine the sugar and
sOf t en e d orange concentrate
and stir into the first mixture.
Turn into 2 small refrigerator
ice cube trays or into a loaf
pan and freeze until firm. Top
portions with a maraschino
cherry. Yields about 2 quarts.

HOUSE on Tuesday. The play
runs through _July 14, with per-
formances scheduled at 8:30
p.m. with the exception of Sat-
urday when there are two per-
formances at 6 and 9 p.m. Ac-
cording to Kenneth E. Schwartz,
Northland Playhouse producer,
all performances will be played
"under the stars," following
damage to the tent during last
weekend's storm. All ticket
holders Will be given "rain
checks" in the event of rain.

LEAGUE BASEBALL CLINICS
will be held from 9:30 to 11
a.m., Saturday, on Belle Isle's
number six baseball diamond.

and Detroit Tigers. All young-
