Why is it a custom among
some Jews to make the Matzos
round in shape?

An Israeli worker checks the watering system for the huge
concrete mixer at the Nesher cement plant at Ramleh. Spurred
by Israel Development Bond capital, Israel's production of cement
is in a . sharp upward spiral. For some time, Israel has been manu-
facturing more cement than is required for local construction,
widespread as that construction continues to be. Recent emphasis
has been on the production of cement for export, thus earning-
new dollars for the young republic. During the first five months
of 1953, Israel exported 18,500 tons of cement valued at $383,566,
while in the corresponding period this year Israel exported 36,554
tons of cement valued at $665,612. Israel Development Bond funds
are serving to expand Israel's key industries, agriculture and
irrigation projects, power supplies, transportation and communi-
cation, and to speed up the exploitation of the country's already
discovered mineral resources.

The text of the Raggadah be-
gins by pointing to the Matzo
and saying "Behold, the bread
of the poor." A poor man never
consumed all of his bread at one
time. He -would always break off
a piece to hold over until the
next meal lest there be no
bread for his next meal. Thus,
before the recitation of this por-
tion, the Matzo is actually
broken and one part put aside in
imitation of the poor man.
There are also the Kabbalists
who claim that breaking the
Matzo is a symbol of the need
for man to break the power of
the spirit of evil which lurks
over him and lures him to evil
acts. Breaking the Matzo shows
man he has the power to break
the course of evil in his hands
and that it becomes a brittle
substance when the egocentric
sense of pride is left out of life
like the leavening of the Matzo.
As the Matzo without leavening
becomes brittle in the hands
of man, so does the evil temp-
tation without pride become
powerless over the mind of man.

North Africa Jewish
Population Figures

ALGIERS, (WJA)—More than
half a million Jews are now liv-
ing in North Africa according
to a recent population survey
computed by the World Jewish
Congress North African office.
French Morocco heads the list
with 250,000 Jews organized in
some sixty communities, of
which Casablanca with a Jew-
ish population of 80,000 is the
largest, followed by Marrakesh
(18,000), Fez (17,000), Meknes
(15,000) and Rabat (12,000).
The number of Jews in Al-
geria is put at 135,000, with over
sixty sizeable communities, of
which twenty-two are placed in
the Department of Algiers (with
30,000 Jews in Algiers itself),
twenty-five in the Department
of Oran (with 30,000 Jews in
Oran), and sixteen in the De-
partment of Constantine (with
Constantine itself showing some
14,000 Jewish inhabitants).
Of the 100,000 Jews in Tunisia,
organized in twenty-five Jewish
communities, 70,000 live in
Tunis, 6,000 in Sousse, 5,600 in
Sfax, 3,400 in Gabes and 2,800
on the Island of Djerba.
Jews in th e International
Zone of Tangiers now number
12,000. An equal number of Jews
is living in the Spanish Zone of
Morocco (Tetuan).

Why are Matzos baked in
thin forms instead of thick
ones?

A thick loaf is not indicative
of the bread of the poor. Furth-
_ ermore, it is claimed on a tech-
nical basis that a thin Matzo is
in less danger of fermenting
than a thick one. The important
characteristic of the Matzo from
the technical standpoint is that
all precautions be taken lest the
dough reach a state of fermen-
tation which would interfere
with its use for Passover. Keep-
ing the Matzos thin safeguards
us against this danger.

Some sources trace this cus-
tom back to the Biblical text in
which the original Matzos of the
Jews in Egypt are described as
"cakes of Matzos" by using the
term "Ugoth" (Ex. 12:39). Cakes
are usually round in form and
thus it is derived that Matzos
should be circular in form. From
a practical standpoint it seems
that dough which is rolled by
hand implements shapes itself
more readily and more quickly
in a round form.
