Foods to Remember
For Sukkoth

Everyone looks forward to the
beautiful fall holiday, SUK-
KOTH, the feast of booths. It is
the festival of the harvest, too,
and the BOOTHS of WILLOWS,
the Sukkah, is decorated with
the colorful fruits and vegetables
available to all of us. Festoons
of cranberries, bunches of lus-
cious green and -purple and red
grapes, red and green apples,
ears of corn, pumpkins and
squashes of various colors—all
01: these are used in the decora-
tion of the Sukkah.
Whether • you expect to take
your meals in the Sukkah or
not, you can • make the special
dish associated with this color-
ful festival. The "must," - of
course, is any one of the • variety
of "Holishkes," chopped meat
wrapped in cabbage leaves, or
as in the Balkan countries, hi
grape leaves. Holishkes are call-
ed "Galuptzi" in some countries
and the kind wrapped in, grape
leaves are called "Sarmali in
Foie de Vitza" or just plain
"Sarmali." Try one or both of

HolishIces (Also called Praakes)
1 pound chopped beef
uncooked rice
3 /4
1 egg
1 onion, grated
1 carrot, grated
1/2 teaspoon salt
10 to 12 cabbage leaves
1/4 cup lemon juice, vinegar or Vs
teaspoon citric acid crystals (sour-
salt)
i/2 cup dark brown sugar
1 cup tomato sauce
water

Combine t h e chopped beef,
rice • and egg. Grate in the onion
and carrot. Season with salt to
taste. Blanch cabbage leaves by
covering with boiling water and
letting stand under cover for 2
to 3 minutes or till limp. Drain
well. Place a ball of the meat
mixture in the center of a leaf
of cabbage and roll up, tucking
in the ends securely. Place each
roll close to the next one in a
heavy frying pan, add the re-
maining ingredients and enough
water to cover. Cover and bring
to a boil. Reduce heat to a mild
simmer for 30 minutes then un-
cover and continue cooking 20
minutes longer or till the liquid
has been reduced by half. Place
in the oven heated to 350' F for
20 minutes or till lightly brown-
ed on top then turn each roll
to brown the under side. Hot.
water may be added in small
quantities if necessary during

shelter of HIAS, the Hebrew Immigrant Aid Society, in prepara-
tion for the eight-day Sukkot holiday. For the majority of the
immigrants being sheltered by HIAS, it will be the first time
in more than a decade that they will pray, sing religious melodies
and feast in a sukkah.

Variation 1: Use grape leaves that are
tender or purchase the canned variety—
almost all Italian-American or Greek
stores carry the canned grape leaves.
Rinse Well in cold water both the fresh
green leaves or -the canned kind. Drain.
The fresh grape leaves must be treated
like the cabbage leaves, by blanching.
Proceed as in basic recipe. These make
small Holishkes or Sarmali.
Variation 2: Add. 1/2 . cup seeded or
seedless 'raisins to Basic Recipe or Varia-
tion 1 to achieve the Near Eastern ver-
sion of this dish. Sarmali (grape leaves
variation) can be browned by placing
under the broiler flame- instead of in
the oven.
Variatign 3: If a thickening is desired
for the sauce, brown 2 tablespoons short-
ening (chicken schmaltz preferred) and
stir in a cupful of the sauce till smooth.
Do this just before placing in the oven
or under broiler flame. It adds a favorite
touch.

ment of foreign investment can
get badly balled up—even in a
nation that welcomes Outside
capital with open arms," the
current issue of Business Week
magazine, reports.
The article declares that the
Alliance Tire and Rubber Co. of
Israel and General Tire and
Rubber Co. have been struggling
for years in a country whose
market can support only one. It
declares that Histadrut has been
putting -mounting pressure on
the Israel government to wipe
out controls on- tire and tube
sales.
Behind this, it asserts, is the
fact that Histadrut owns half
of the nation's vehicles and con-
trols '75 percent of all Israeli
road transport.
"Its officials say," the report
adds, "that if tire controls are
lifted, Histadrut vehicles will use
Alliance tires only."
Business Week said the trouble
started in 1949 when Histadrut
found it could not purchase a
majority interest in General. It
thereupon joined with U. S. in-

the market didn't warrant an-
other," the article explains.
It further points out that Gen-
eral had a government promise
of exclusive rights to the mar-
ket, and Alliance said it would
concentrate on exports. The ar-
rangement did not work out, and
both have been scrambling for
a scarce foreign exchange to fi-
nance raw materials.
Neither plant is working at
full capacity, and sales are de-
termined by government permits
whiclusplit the available market.
The only hope, if both are to re-
main in business, the article
states, is to expand tire exports,
which is hard to do because of
the high price o.f the Israeli
tires.
"Meanwhile," the magazine
concludes, "the government is
nursing a giant-size headache—
hating to annoy the potent His-
tadrut and fearing that General
will some day throw in the
sponge.

LONDON, (JTA) — Ayatullah
Kashani, an extremist Moslem

leader who urged Iranians to
join with. the Arab League
against Israel and otherwise agi-
tated against Jews, will resume
political activities shortly under
the new government of. Premier
Zahedi, according to the Tehe-
ran radio.
Kashani made a statement to
the Teheran correspondent of
the Egyptian newspaper, Al Ah-
ram, in which he "confirmed
his determination to resume his
political activities following his
withdrawal from the political
arena in recent months."
In reply to a question as to
whether he proposed to reinsti-
tute his candidacy for the office
of Speaker of Majlis (parlia-
ment), Kashani replied ;that he
considered himself abOve that
office. Kashani pointed out that
when he previously was _speaker,
he did not attend its sessions
and all- resolutions were sent to
him in his residence for approv-
al. •
