WHY NOT GIVE A HANUKAH LATKE PARTY
THIS YEAR? IT'S SIMPLE, TOO—HERE'S HOW:

The Feast of Hanukah, with
its candles gleaming, its mas-
querade parties and enactment
of the plays in which the brave
Macabees made their heroic
stand against overwhelming en-
emies in 165 B.C.E., would not
be complete without LATKES,
and other goodies associated
with this festive occasion.
In this country it has become
a delightful custom to give
POTATO LATKE PARTIES.
Here's a good recipe for Lat-
kes. Hanukah style:

4 pounds potatoes
1 large onion
4 eggs
1 cup flour
2 teaspoons salt
Melted vegetable shortening or oil
for deep frying
Pare and grate the potatoes into a
large mixing bowl. Squeeze out some of
the liquid. Peel and grate the onion into
the potato. Add eggs. flour and salt and
stir to make a smooth batter that will
be thick enough to drop from the spoon.
Have enough shortening or oil to he
about 1 inch deep in a heavy frying
pan. Heat the shortening before dropping
the batter with a spoon to make 3 inch
cakes. Cook over moderate heat until
brown on the other side. Remove with
a pancake turner or perforated spoon.
Let drain before placing on layers of
paper towels for draining off excess
fat. Serve hot with applesauce. cranberry
sauce. sour cream and'or creamed cot-
tage cheese. Serves 10 to 12.

ROAST GOOSE, with dressing or
without, but with a splendid
yield of Goose Schmaltz and
Greben. If the Schmaltz is to be
stored for Passover use, be cer-
tain to follow the customary
rules for preparing it in dishes •
and pots reserved for Passover •
use. The Greben will keep for a
week or more if stored in the •
refrigerator in a covered con-
tainer.
If roast goose is prepared and
stuffed after removing the fatty
skin and inside clusters of fat,
you will want to wrap the
stuffed goose in a coating of
aluminum foil or a half-inch
thick coating of biscuit dough
before roasting. This keeps the
meat from becoming too dry.
Try it this way:
Roast Goose in a Blanket

After preparing the goose by removing
all feathers, singeing, soaking and salting
tin accordance with the rules of Kash-
ruth). cut off the heavy layers of skin
and fat. Cut the skin and fat into small
pieces before rendering with sliced onion.
Reserve the neck skin for stuffing. Cook
the giblets. neck bone and wing tips in
enough cold water to• cover well, adding
'a small carrot, onion, celery and parsley.
When the gizzard is tender, strain well.
Use the liquid as a basis for gravy and
dice the heart and ,gizzard to be added
to the stuffing or to the gravy as desired.
Use the liver for chopped liver canapes
after broiling, chopping and adding
mashed hard cooked eggs, minced parsley
and some of the rendered schmaltz, with
or without a few chopped greben.
Rub the inside and outside of goose
with a clove of garlic or sprinkle with
garlic powder mixed with a little flour
and paprika. Make a biscuit dough by
mixing 21/2 cups of flour. 1 teaspoon salt,
1 teaspoon baking powder and 3 table-
'<,01"--- spoons rendered schmaltz until it forms
particles the size of peas. Add approxi-
mately 1/4 cup ice water and form a
'ball of dough compact enough to roll
out to half-inch thicknesses. Place this
"blanket" over the breast and tuck under
the goose before placing in a roasting
pan. Roast the goose-in-a-blanket at 320°
F, allowing 30 minutes per pound. Be
sure to prick the top of "blanket" with
a fork in several places to permit steam
to escape. You'll like the crispy blanket,
too!

Roast Goose Dressings

Basic Bread Crumb Dressing
1 large onion, diced
4 tablespoons schmaltz
1 1 :2 cups diced celery, including leaves
1/2 green pepper, diced fine
bz cup shredded raw carrot
;2 cup thinly sliced fresh or
canned mushrooms
6 cups dry challah or other
bread crumbs
2 eggs
1/2 teaspoon garlic powder
1 teaspoon salt
A dash of ginger, white pepper or
paprika
Solite the diced onion in h-iit melted
schmaltz for 2 minutes —before adding
the celery. green pepper and carrot. Stir
while cooking over moderate heat for 5
minutes. Add bread crumbs and mush-
rooms and stir for 1 minute. Beat
in a large mixing bowl and add the eggs
in-
gredients from the frying pan, stirring
wen. Add the seasonings as soon as the
mixture is cool. If the mixture is too dry.
a half cup of hot soup. or water flavored
with a little orange or lemon juice. may
be stirred in. The dressing should not
