Family Style Sweet-Sour Fish

3 to 4 lbs. fresh fish (Pike, Trout,
Striped Bass or any other firm
fleshed fresh fish)
1 tablespoon salt
Cola water to cover
1 large onion
1 carrot, diced
3 bay leaves
/7 cup cider vinegar
V., cup brown sugar
8 to 10 gingersnaps
3/4 cup seeded raisins
1 lemon, sliced fine

gills. Cut into serving portions
and salt each piece on all sides.
Let stand two hours in a covered
container in the refrigerator.
Wash and drain well. Cover with
cold water, add the onion cut or
whole, carrot and bay leaves,
and cook over moderate heat al-
lowing 10 minutes per pound.
Lift out the cooked pieces of fish
and place on a serving platter.
Strain the liquid and add the
remaining ingredients except
lemon. Cook 10 minutes at a
moderate boil or till thickened.
Taste and add vinegar or sugar
or both to suit the taste. Cook
one minute longer and pour
over the cooked fish. Garnish
with the lemon slices and chill
in the refrigerator as soon as
cool. Serve cold with additional
garnish of sliced hard-cooked
eggs, parsley, red radish roses
and curls of raw carrot. Serves
six to eight.
Variation: Stir the hot sauce
into two or three well-beaten
eggs till well combined and then
pour over the cooked fish.
Eggplant with Sour Cream
' Israel Style

1 large eggplant, pared and cut
into 1 inch cubes
1 large onion, diced fine
3 tablespoons salad oil.
3 tablespoons finely diced celery
•or minced parsley
1 tablespoon flour
V4 cup hot water
1 /2 teaspoon salt
1 cup sour cream
Fres dill or parsley sprigs for garnish

Lipman Gerber Works
On New Storage Battery

Lipman S. Gerber, of 2315
Calvert, an employee of the De-
troit Arsenal, was one of the di-
rectors of an Army Ordnance
Corps project conducted at the
University of Michigan which
developed a new lightweight
storage battery. The battery, an
amazing advance in fighting be-
low zero temperatures, will start
a car motor at 65 degrees below

zero.
Gerber, who worked with L. L.

Carick, professor of chemical
engineering at U. of M., is an
active Jewish worker. He is a
member of the Haifa Technion
Society, the Jewish War Veter-
ans and the Zionist Organiza-
tion.
The new battery, which is de-
signed to meet exacting stand-
ards of widespread military op-
erations, uses lead plating in-
stead of the materials ordinarily
corroded by sulfuric acid. The
battery also operates effectively
at temperatures ranging to 165
degrees above zero.

Summer menus should include
plenty of fruit or fruit juice,
salads of available fresh vege-
tables and greens like lettuce,
chicory and escarole, and fresh
fish.
An old favorite in Jewish
households is time-tested and
appetite - approved sweet - sour
fish. Its origin is difficult to
trace. But Jewish homemakers
from every country have relied
on its appeal to jaded midsum-
mer appetites for that special
"lift." Besides, it can be pre-
pared long in advance and
chilled. It makes an excellent
meat substitute, even when meat
prices are not miles beyond the
average food budget. So, try this
on your family and collect their
"Mm'n'y's" of gustatory ap-
plause and appreciation.

Brown the diced onion in hot
salad oil. using a heavy frying
pan. Add the diced eggplant and
stir till lightly browned on all
sides. Add the diced celery or
parsley and stir once or twice.
Sprinkle the flour over the top
and stir in the hot water and
salt. Cover and cook over mod-
erate heat till the eggplant
cubes are tender—approximate-
ly five minutes. Remove from
heat and turn into a serving
dish or platter. Cover with sour
cream and sprinkle the fresh
dill or parsley over. Serves four.
Variation: Add one cup peeled
and diced fresh tomatoes before
sprinkling with flour. Add one
teaspoon brown sugar, cover and
cook. Chill before serving with
sour cream and dill topping.
