Passover
Culinary
Suggestions

By Mildred Grosberg Benin

Here is a recipe which is likely
to be a major feature of your
Seder meal, can serve as a snack
between meals, and may also be
used the year round. It is an old,
well-tried favorite. If you haven't
tried it before do so now.

CHREMSEL:
(1) Sift 1 cup of matzoth meal
in a bowl, stir into it 1 cup of
boiling soup stock or wine. When
mixed add 1 tablespoon of chop-
ped almonds, 1 teaspoon of sugar,
a pinch of salt and the yolks of
4 eggs well beaten; then add the
stiffly-beaten whites of the 4 eggs
and fry by tablespoonsful in boil-
ing hot butter. Serve with wine
sauce.
(2) Soak 3 matzos until soft.
Press out all the water, place the
matzos in a bowl, and stir them
until thoroughly mashed. Add
1/4 teaspoon of salt, the yolks of
4 eggs, 1 cup of sugar, 1/4 cup of
seeded raisins and 1/4 cup of
pounded, blanched amonds. Stir
in 1/4 cup of melted fat and 1/4
teaspoon of cinnamon. Beat the
egg whites until stiff and fold
into the batter. Drop by spoon-
fuls into hot, shallow fat, and
fry until golden brown. Lay the
chremsel on a large platter, and
cover with stewed, pitted prunes.
Eat while hot.

Mr. Kurzon was for two years
director of servicemen's activi-
ties for the USO-National Jew-
ish Welfare Board in the Battle
Creek area and worked closely
with patients at the Percy Jones
General Hospital.

Mr. Kurzon pointed out that
there was no need of changing
the USO program but that it
would be well to adapt new
methods of carrying out the basic
program. He stated that USO
hostesses are on the front lines
in meeting the returned service-
men and introducing them back
to normal -everyday living.
Mrs. Maurice Landau, who
heads USO-JWB volunteer acti-
vities for Detroit with Mrs.
Julian Krolick, was chairman of
the meeting.
An important development at
the meeting was the formation
of a hostess council to plan
