When mixed add 1 tablespoon of chop- ped almonds, 1 teaspoon of sugar, a pinch of salt and the yolks of 4 eggs well beaten; then add the stiffly-beaten whites of the 4 eggs and fry by tablespoonsful in boil- ing hot butter. Serve with wine sauce. (2) Soak 3 matzos until soft. Press out all the water, place the matzos in a bowl, and stir them until thoroughly mashed. Add 1/4 teaspoon of salt, the yolks of 4 eggs, 1 cup of sugar, 1/4 cup of seeded raisins and 1/4 cup of pounded, blanched amonds. Stir in 1/4 cup of melted fat and 1/4 teaspoon of cinnamon. Beat the egg whites until stiff and fold into the batter. Drop by spoon- fuls into hot, shallow fat, and fry until golden brown. Lay the chremsel on a large platter, and cover with stewed, pitted prunes. Eat while hot.
