S. Hub- hard in the west physics amphitheater at 5:00 o'clock yesterday afternoon. He emphasized the importance of sci- entific methods as against a rule.of thumbi or guess work practices in cooking and handling chemicals. He pointed out that the average wo- man might laugh at the methods of "domestic science girl," but that the latter at least knows "why" she does certain things, and does not do others, "After all," he said, "self-satisfaction is a thing that makes our tasks easy and removes the drudgery from every day life." Dr. Hubbard then illustrated some of the "whys" of cooking, first showing the chemical action in the rising of bread. Numerous chemical materials were criticised by the speaker who has made a special study of their compo- sition in connection with his course in household chemistry. "The cream of tartar in this country," he said, "is controlled by a trust, and it is largely due to this trust that alum powders have fallen into distrust in some plac- es." It was shown that the results of alum are not as disastrous as is often said. He urged house wives to make their own cream of tartar powder. "Why jelly jells," and "why we cook," were other topics which receiv- ed a thorough discussion. Leaving foods, Dr. Hubbard moved to the ward- robe, and told how to distinguish va- rious kinds of cloth. Simple tests were shown, which may be applied by the average housewife. Greater so- phistication and a greater knowledge of the "why" of things was urged by the speaker. He said that interest in cooking raises what is generally drudgery to a pleasure.
