Often the examination is not made, and cannot be made, un- til someone has drunk the milk. Three years ago one milkman caused 106 -cases of typhoid ando.six deaths be- cause, by the tine his supply could be cut off, the infection was already in the bodies of the victims. Pas- teurization is the one sure method of taking care of that. The case of ty- phoid 'would not develop until two weeks after infection, and it would then be hard to trace back. "Our creameries here are abso- lutely up-to-the-minute in their pas- teurization processes. We require that all milk, pasteurized or not, shall come up to certain standards. Our ideal milk must not run above 50,000 per cubic centimeter bacterio- logica court; it must contain 4 per cent or more of butter fat, and no sediment; and it must have been held for 30 minutes in a temperature of 145 degrees. "As a matter oft fact the milk serv- ed by the Freeman house has lately been showing over a million bac- teriological count. We must bring the city to the point where that sort of milk is at least made safe for the public. We have no ordinances here, and the only way we can secure safe- ty in the boarding houses is through the force of public opinion."
