w U U v U 12B - The Michigan Daily - Weekend Magazine - Thursday, March 13, 2003 SECRETS OF THE PROS TIoS' QUESADILLAS HARRIET SEAVER, OWNER OF Tio's, PRESENTS .,, INGREDIENTS 2 ten-inch flour tortillas 2/3-3/4 cup mixed shredded monter- rey and cheddar cheese 2 tbs. diced tomato 1 tbs. diced onion optional: 2 oz. shredded chicken or ground beef INSTRUCTIONS For cheese quesadillas, sprinkle cheese, tomato and onion on one tor- tilla and lay another on top. Grill tortillas on stove-top or in a griddle. Make sure to grill on an ungreased surface. Heat until edges curl and the bottom tortilla is nicely browned. Flip over and grill until other side browns. When finished, take off grill and let cool. Cut into pie-shaped pieces and serve with lettuce, sour cream and salsa on side of a plate. If preparing with chicken and beef, first heat meat in a griddle until fully cooked. Then put meat onto bottom tor- tilla and proceed to layer with other ingredients. Tio's is located at 333 E.
