"Theeducatedpalette"can be yours,
as long as it's not just your mind that's
hungry. University Catering uses this
slogan to accentuate the difference be-
tween itself and other catering services
on the University campus.
University Catering is part of the
same department that runs the Michi-
gan League, the Michigan Union and
the North Campus Commons. Each
building has its own food service, but
University Catering is the only ser-
vice that provides "off-site" service.
It can cater in buildings other than its
base location in North Campus Com-
mons.
Anne Flora, director of University
Unions food services, said the catered
parties must be paid for by aUniversity
account number. The events are prima-
rily in University buildings, but can
be in other locations if related to the
educational mission of the Univer-
sity, such as a professor hosting a
visiting lecturer.
University Catering organizes the

presidential tailgate, furnishes the
Michigan Stadium press box with
snacks for all games and prepares the
football team and basketball team din-
ners, as well as breakfast and lunch
meetings.
The University department that
sponsors the party uses funds from its
budget so the payment is pretty simple,
Flora said.
She added that the money is just
moved between different University
accounts depending on who is involved
in the affair- the department sponsor,
the building where the affair is held, the
University Unions food service and so
on.
The range of University Catering
runs the gamut from coffee and donuts
to Graduation parties.
"So much is just coffee service,"
said Shelly Bell, general manager of
catering.
The larger functions are planned by
the account executives with the group
who is funding the affair. University
Catering is able to provide everything
- food, staffing, entertainment and

floral arrangements.
Bell said that many people want a
maize and blue theme but the service
does many different things. It de-
pends on the type of ambiance the
group is trying to achieve, she added.
"We did a southwestern theme for a
dinner and brought in cacti," Bell said.
With 20 different types of linen,
quality of food presentation is appar-
ently just as important as quality of
taste.
"We're conscientious of putting
on a good show as well as good food,"
Bell said.
The service provides a variety of
foods, from stews to lobster dinners to
desserts. Most everything is made from
scratch by a graduate of the Culinary
Institute, reputed as one of the finest
culinary schools.
The chef and the other staff mem-
bers haveavaried amountof schooling
and experience and ,have all been
through preparatory training.
"We do as much as possible to
employ students," Bell said. "They get
minimum wage plus gratuity."
