"ONE BOWL of brown rice is not going to make you feel good. One has to be committed and determined to change your eating habits on a long term basis," Coats said. These foods are often void of unnecessary food preservatives. "There is always the danger that we can fall into the same category as a gourmet store," Coats said. "The business of health foods often becomes a semantic game." Coats is leary of many fad diets and programs, which he says have "varying degrees of efficacy. Generally the founders of these diets have uncovered a principal or two-only a small part of what makes up good nutrition." ."For the most part, the American diet is abysmally poor. "For the most part, the American diet is abysmally poor. People even buy hamburgers with additional fat added to them," he said. Although Coats does eat an occassional fast-food hamburger, he said processed foods-with all their chemical additives-are counter- productive to the body and deter from its most efficient functioning. "Students in particular depend on many stimulants, whether it's coffee, tea or soda," he said. "People have a justifiable paranoia of chemical names, but they need to educate themselves about what it is they are putting into and onto their bodies. The patient died in the ER, and the volunteer sat and talked with the wife for eight hours. "I THINK the volunteers are surprised about the electricity in the environment. It's truly an ex- perience they don't forget," Leith said. Leith said the experiences make a lasting impact on the volunteers. "Each of them, individually, has to deal with the feelings that go along with seeing those kinds of accidents," Leith said. She explained that the volunteers are instructed to write in a log book at the end of every shift, especially if they are upset or impressed by something they saw that day. "If we pick up a message that a volunteer was really upset with what he or she saw, then we get back to the volunteer. The assurance is that our office is always available," said Leith. Dr. Richard Burney, interim head of Emergency Services, said Emergency Room volunteers must have a "special kind of interest." "You can't put (just) anybody down there as a volunteer," he said. "There is a certain amount of life and death in there. They-have to be mature and have to be able to keep out of the way." One-fourth of the students work in the ER for class credit through Project Outreach. Leith estimated that 95 percent of the volunteers hope to attend medical school.
