Make your nectarines happy Nectarines, fruit of the gods- or at least a juicy snack on a hot day. Maybe you slice them up with sugar and milk and sav- or them slowly. Or maybe you wolf them down. In any case, a special nectarine party deserves a special cookie, a slightly sugar- ed cookie, one that melts in your mouth with the nectarine slices. Thanks to Cecily Brownstone, an unliberated but knowledgeable cook at the Associated P r e s s The Daily opens its first recipe column with Soul Shortbread Cookies and Nectarines. It's easy and quick. If you start your cook- ies now, you'll have crumbs on your face in less than an hour. With your fingers work in butter until mixture holds together. On a large cookie sheet, with a rolling pin, roll out dough to a rectangle about 10%:2 by 7% in- ches. Sprinkle with sesame seeds. Cut into 6 squares each 31% by 31, inches. Cut each square in -AP Photo half and with a wide metal spat- ula separate slightly. Bake in a preheated 300-degree oven until a light golden brown - 20 to 25 minutes. With a wide metal spatula re- move to wire rack to cool. Store in a tightly coyered tin box. When ready to serve, cut nec- tarines and mix with granulated sugar Top individual portions of nectarines with whipped cream, and accompany with the cookies. Makes six generous servings.
