So much so that consumers have largely come to ignore such usually hollow claims and to rely instead on their own dining experiences and word-of-mouth impres- sions of their friends in selecting a new or favorite restaurant . . . and that is exactly how we would like things to be. Our goals are top quality and thoroughness in all facets, raw food items, preparation, service, wines, drinks, atmosphere. We have found that all of these speak for themselves in an increasingly restaurant-conscious area such as Ann Arbor." Sitting at a corner window table on a newly opened section of the front porch which looks out in one direction on gently rolling countryside and in another on a stand of rather majestic pines, it is easy to understand why the Lord Fox is a choice place to dine-if only for the setting and atmosphere it provdes. But for Coppa, his new chef Kevin Gawronski, and his maitre d' Peter DiLorenzi, the setting is only the bare beginning. All three are involved in the restaurant because they love fine food and wines, and all three have firm ideas about what is acceptable fare. Gawronski, formerly sous chef of the London Chop House, insists that all his fish- flounder, red snapper, whitefish, silver salmon, rainbow trout, and occasionally blue- fish, scord, pickerel, and swordfish-be absolutely fresh. At the Lord Fox, the clams and oysters used for frying are freshly shucked, a rarity in this area. "The stocks used in our soups, sauces, and poaching bouillions are all made from raw ingredients in our kitchen," explains Gawronski, who is currently revising the menu to include more classic, sauce-based dishes. Wines have long been a specialty at the Lord Fox, and recently Coppa has released a large number of excellent Bordeaux Burgundies, Rhines and Moselles from his private cellars for sale at the restaurant. DiLorenzi, who supervises wine purchasing and service, is justly proud of the everyday wine list as well and explains why, "Our list is constantly changing to enable me to offer the best possible wines in each cate- gory at moderate prices. Whenever possible we select grand cru and estate bottled w~ines."
