With spring here and finals ap-
proaching one needs a good rea-
son for spending any time in the
kitchen. A large pot of hearty
mushroom barley soup isrea-
son enough for me.
This recipe is variable as tj
ingredients and is always suc-
cessful as God looks over those
who make mushroom barley soup.
Take you largest pot'and fill it
half full with water. (As you
can see the recipe becomes var-
iable with the first step). Start
the water boiling and throw in
three pieces of celery - diced,
one onion - diced, a box of

room pieces or one package of
dried mushrooms, or one pound
of freshly sauteed mushroom

You can also throw in a fix cut
up potatoes and tomatoes or any
other vegetable or thing yo u
damn well please.
Put a top on the pot and sim-

mer for one hour stirring accas-
sionally. At the end of the hour
add one can of cream of mush-
room soup and cook an additional
15 minutes.
For the extra touch that will
make you feel like monarch of
the mushrooms add another quar-
ter pound of uniformly sliced
sauteed mushrooms before serv-
ing.
