Oh well, you can't win 'em all . . . C h o o s e eggplant that is smooth and firm with a deep purple, blemish-free skin. It should be prepared very soon after purchase. Zucchini Au Gratin, another delicious and different creation, is made with sliced and sau- teed zucchini, mushrooms and onions tossed with Parmesan cheese. The amounts of each can be ' varied according to taste. This dish is nutritious as the zucchini contains vitamin A, the mushrooms vitamin D, and° the onions have substantial amounts of vitamins B, D, andI G, and a little vitamin A. Of course, the cheese provides protein. Select firm zucchini and use it immediately after purchase. Choose mushrooms with closed caps that are smooth, firm and unblemished, with no suggestion! of drying out. Mushrooms are_ best when stored no longer than three days in the refrigerator.; Wash and dry well when ready to use. Like the other recipes, Spin- loolm ach Casserole, made with frozen, spinach, cheese, milk, Cream of Mushroom soup and sour cream s very rich, so serve it with a simple entree. This recipe is an easy way to perk up frozen spinach; it pro- vides an excellent source of vitamin A, a good source of; iron and vitamin C, and a' small amount of vitamin B. 12 cups tomato sauce Pare eggplant; cut into slices. 'Dip each slice first in egg, then into crumbs. Saute in oil until brown on both sides. Drain well. Place eggplant in 2-quart casserole. Sprinkle with Par- mesan and oregano. Cover well with tomato sauce. Add layer of Mozzarella. Repeat until all eggplant is used, topping last layer with Mozzarella. Bake in 0 impi 1 large yellow or purple onion Grated Parmesan cheese, to taste Wash zucchini and trim ends. Do not peel. Cut into 1/4-inch rounds. Slice mushrooms and onions. Heat enough oil in skil- let to cover bottom. Add zuc- chini, mushrooms, salt and pep- per. Saute 5 minutes over medium heat until zucchini is tender, but crisp. Remove slices of zucchini and mushrooms as they are done. Keep warm. When everything is removed from skillet, add more oil if necessary, and add onions. Saute until tender. When onions are cooked, return zucchini and mushrooms to skillet and liber- ally sprinkle grated Parmesan cheese over mixture and toss lightly. Serve at once.'Serves 4. SPINACH CASSEROLE 2 10 ounce packages frozen spinach 1 can condensed cream of mushrooms soup 1 3 cup milk 3 4 cup grated swiss or ched- dar cheese meals % cup sour cream 2 tablespoons margarine 1 teaspoon salt 1/4 teaspoon pepper % cup bread crumbs mixed with 1 tablespoon melted butter Cook spinach according to package directions;drain well. Blend soup with milk in a heavy saucepan; stir in cheese, sour cream, margarine and sea- sonings. Add spinach; mix well. Turn into a 1 -quart cas- serole; top with bread crumbs. Changing Woman (MCA 451) is an album of contrasts in which Buffy flies through each of the ten cuts with varying styles. Buffy's vocal range at times is incredibly good. She floats sweetly in "All Around the World". Yet in "Eagle Man/Chang- ing Woman" she chants and sings in a low, almost raspy tone. She sings choirlike harmony with herself that magnifies the imagery of her lyrics. The instrumental work, however, is too dominant. The bass and percussion emerge as too loud and heavy, masking Buffy's lyric poetry. In short, Buffy offers a good effort on Changing Woman. "Mongrel Pup" contains the makings of a great rock song, while "Nobody Will Ever Know It's Real But You" evokes a gentle feeling in the best tradition of the love ballad. -Joe McMullen ELECTRIC KEYBOARD pioneer Chick Corea brings further, delights to his devoted following with Where Have I KnownI You Before (Polydor PI) 6509).
