CHRISTMAS FOODS: Special Dishes Served During Holiday Season By LINDA SIGESMUND Christmas is a time for celebra- tion--and feasting. One of the major expressions of Christmas traditions is found in the splendid array of foods served specially at this festive time of the year, in Continental countries, England and America. The traditional Christmas din- ner supposedly consists of those goodies so temptingly described by Charles Dickens in his A Christmas Carol. The goose, the main course was the object of "universal ad- miration" for its tenderness, fla- vour, size and cheapness." Enhancing the flavor of the de- lightful foul were applesauce, stuf- fing and mashed potatoes. Although this is the traditional dinner, where food is concerned, man's imagination will not be re- stricted to custom. In this coun- try, turkey or chicken are the us- ual replacements' for goose. Dozens and dozens of Christmas cookies, often Swedish, anticipate the holiday for days in advance. Perhaps it's not even the taste of the cookies themselves but the at- mosphere attached to them, that makes them so desirable. Many eagerly anticipate the Christmas season with visions of fruit cake, egg nog, and roasted chestnuts. In fact, these foods, particular- ly fruit cake and egg nog, have become so typical of the American Christmas that many cannot im- agine what the holiday would be like without them. Certainly these delicacies are not the cause of the Christmas spirit, but equally certainly they contribute greately to it.
