Spoon oil into larg heavy
saucepan; place ov r mod rate heat.
Add rice and cook, tirring frequent­
ly, until grains are toasted gold n
brown. Add broth and lt; increase
h at to moderately high. Bring to
boil. Cover tightly; reduc heat to
low and simmer 10 minutes. Un­
cover, stir in parsley nd scallions;
fluff gently with fork; cover and
cook five to ei ht minutes longer,
until fluffy, t nd r and almost dry.
