Let me not misl d you: despite its
name, wild rice is not a grain. It is, in
fact, a native North American
quatic grass that coo like rice, is
delectably chewy, is low in fat nd
high in protein; is a good source of
the B vitamins, calcium and potas­
sium and a half cup provides 10 per­
cent of the USDRA for iron.
I remember when wild rice sold for
as much as $20 a pound. Today,
California wild rice costs between
$3.50 and $6.00 per pound with
some discount houses selling it for
low as $2.95. Because it expands
'three to four times in cooking, one
pound will yield eight to 10 cups, or
20 to 30 servings.
