In a word, NO! The ri k of

various kinds of bacteria and
other potentially harmful or

Keep in mind, that
hellfish uch as clam ,
oy ters, and mussels live by
filtering 15 to 20 gallons of
water a day! . If the water
they inhabit i polluted,
they'll retain high levels of
bacteria and viruses.

fact that simply marinating
raw fish in lemon or lime
juice is not equivalent to
proper cooking.
That is, it will not kill all
bacteria, viruses, and
parasites. Also, although
sushi chefs are required to be
licensed in Japan, this not
true in the U.S., and even for
tbose chefs that come from
Japan to the U.S., there's no
way to reliably check their
credentials once in this
. country.
Preparing and eating raw
fish yourself at home is
'definitely not recommended,
since "home-made" raw fish
is the most common ource
of parasitic infection from
fish in this country.
if you make gefilte fish or
another dish that uses raw
ground fish, remember not to
sample it until it's fully
cooked. If you just can't
bear (no pun intended) to
give up raw fish, the FDA
(Food and Drug Administra
tion) recommends that we at
least use frozen fish, so that
all the parasites will be
destroyed.

If you do not do this, con-
ider the results from the fol
lowing tudy. Recently, the
FDA took samples from 15
sushi suppliers in Seattle.
Out of 92 pieces, 7 of them
(1 in 13) contained up to 3
parasitic larvae.
However, after proper
freezing all of these "baby"
parasites were killed. Keep
in mind, even though proper
freezi ng doe kill all
parasite in raw fish it does
not kill bacteria or viruse
that may also be in the fish.
Again, only proper cooking
can do that.
