FOOD INTOLERANCE.
Many persons lack certain digestive
chemicals (enzymes) necessary to
, breakdown some foods, such as lac
_tase which is needed to breakdown
lactose (milk sugar).
Reactions to fOQd additives, like
sulfites and MSG (monosodium,
glutamate).
Reactions to naturally occuring
substances in foods, like tyramine in
cheese, phenylethylamine in choco
late, caffeine in coffee and some teas
and soft drinks, and some chemicals
in alcoholic drinks.
Food Poisoning. This is due to
spoiled or contaminated food or
water.
Unknown reactions. Some
people have adverse reactions that
, they attribute to foods that may ac
tually go away when treated as an
allergy, yet there is no evidence of a
physiologic basis for their reaction.
WHEN A SUSCEPTIBLE per
son eats the problem food, their body
reacts to certain proteins, or
"allergens', in it. In response to
these allergens, their immune system
produces antibodies called IgE.
These IgE antibodies in turn ac
tivate specialized immune cells in
their blood and tissues causing the
. release of certain chemicals that
produce the allergic symptoms.
These can include hives, 'tching
and swelling of the face, hands, and
feet. The person may also ex
perience abdominal pain, with
nausea and vomiting, and difficulty
breathing, with asthma-like wheez
ing.
In the most severe form, a person
may develope anaphylactic shock,
with difficulty breathing, an ir
regular heartbeat, a drop in blood
press ure, and even death.
The time it takes for ymptoms to
develop varies from person to per
son, as does the severity of the reac
tion. The time it takes for the food to
be dige ted also can affect the timing
of signs and symptoms.

stomach. Once the food bas been
digested and is circulating in the
blood, a generalized body rash with
itching may develope.
However, ometimes these
symptoms may be delayed up to a
day or two later. When this occurs,

their doctor to pin down what the
reaction is due to.

Food allergies, like other types of
allergic reactions, can tart at any

is th daughter of Mr. and Mrs. Kirk
Garfield, who also have two other
daughters and two ons. Only
Patrina has sickle cell disea e,
however, four of the other family
members ha the ickle cell trai 1.
Patrina is a joyful, lively and
extremely outgoing child who per
severes in pi te of having sickle cell
anemia, She is quite verbally ex
pressive and will attempt any task
set before her.
Patrina's talents include, but are
not limited to singing and dancing,
activities which she both perform
well and enjoys. Patrina i very
