method rather than oak dried
beans overnight. Place a cup of
beans in a pan with four cups of
water. Bring to boiling; boil un
covered for two minutes. Tum off
heat and let them stand, covered,
for one hour. Then you can follow
your recipe for COOking beans as
directed. Lentils and split peas
need not be soaked. They become
softened injust an hour of cooking.
