turkey breast. The more in­
gredients, the more creative the
gusts can be in assembling the
giant sandwich.
Set these turkey meats out on
a platter, along wi th some other
ingredien ts like provolone
cheese, lettuce, tomato and
onion. Whip together a quick
dre sing and have it handy, along
with a large load of French
bread. Add ome odas, chip
pretzels, pickles and some of the
latest music, and you'll have an
instant party kids and adults will
love.
Be certain to have the camera
handy to take photographs of the
work in progress, as well as
everyone standing proudly about
their finished product before
they dig into it.
Or, if you prefer, serve Turkey'

Urban League awarded Hud grs.nt
The U.S. Department of Housing and Urban Development
recently awarded the National Urban League a quarter of a
million dollars to develop a National Fair Housing Education
and Outreach Initiative.
The initiative will have two components, a comprehensive
fair hous!ng effort, which includes convening it Fair Housing
Forum WI th a follow-up program, and an overall affiliate out­
reach program.
Special grant to develop model services will be allocated to
,three cities: Tacoma, Washington; Indianapolis, Indiana; and
Jacksonville, Florida.
A total of 60 ��ban League affiliates have. Signed on as part
of the overall affiliate network outreach campaign. The League
is one of five organizations to be awarded funds to cooperatively
promote fair housing to its constituents, and to other protected
classes specified in the amended Fair Housing Act.
Origi��lly enacted in 1968, the Act now includes handicapped
a.nd faml�I�1 status as protected cla ses and levie fines, penal­
ties, puntuve damages, as well a attorney's fees to convicted
violators. "
The. Act also sets new construction standards to permit-nand­
icap access to certain buildings.

1. With serrated bread knife,
slice bread in half lengthwise.
Hollow out centers of both bread
halves, leaving 3/4-inch shell.
Reserve removed bread for
another use.

mushroom marinade and mayon­
naise; spread mixture over each
bread shell.
3. In bottom bread hell even­
ly arrange half of tomato slices;
top with mushrooms, turkey,
cheese, onion, black olives, and
remaining tomato slices. In­
gredients will be mounded well
above bread shell rim. Top with
remaining bread shell.
4. Wrap sandwich in 3 to 4
la yers of plas tic wrap and
refrigerate overnight.

wrapped sandwich on solid sur­
face; cover with large cutting
board. Press on top of cutting
board and sandwich. This is im­
portant to do in order to com­
press all ingredients before
slicing.
