he holidays are a time for
people to come together to
share a meal with family
and friends. I like
to serve different
kinds of salads,
and this is always a
family favorite at our
holiday celebrations.
It’s easy and can be
made ahead and so
delicious!
DEBRA’S SALMON AND WILD
RICE SALAD
Serves 6
Ingredients
2 pounds center-cut salmon, cooked to
your liking, chilled
1 cup wild rice, cooked according to
package directions, chilled
5 ounces arugula, washed and spun dry
1 container assorted colored cherry
tomatoes, washed and dried; halved, if
large
8 ounces green beans, cooked and chilled
1 container pomegranate arils
Chopped parsley
Dill fronds
Optional Ingredients:
1 apple, sliced thin
½ small red onion, chopped small
4 celery stalks, chopped small
½ cup feta cheese, crumbled
Dressing:
½ cup runny tahini (I like the brand Achdut
Tahini)
2-4 Tablespoons pomegranate molasses
1 lemon, juiced, plus another half if you like
a tart dressing
1-2 Tablespoons runny honey, depending
on how sweet you like your dressing
1 teaspoon Dijon mustard
garlic clove
Salt and pepper to taste
¼ to ½ cup cold water
Directions
To make the dressing, use a
food processor to process all the
ingredients except the water until
smooth. Add the cold water to
achieve a pourable dressing. Set
aside.
On a large platter, spread the
wild rice on the bottom and then
add the arugula on top. Break up
the salmon into large flakes and
arrange on top of the arugula.
Mix together the cherry tomatoes
and the green beans and arrange
on top of the salmon. Sprinkle with
the pomegranate arils.
Pour on the dressing and garnish
with the parsley and dill. Add
optional ingredients. Salad can be
made two days ahead, keeping
all the ingredients separate until
serving time.
