he leaves are turning and
there is a chill in the air.
What better time to have a
big pot of soup simmering on the
stovetop? I love to make all kinds
of soups and have
them in the freezer
for those nights
when you do not feel
like cooking. This
vegetable lentil soup
is so delicious and
filling. Serve with a
big piece of challah and dinner is
ready!

LENTIL VEGETABLE SOUP
Makes 8-10 servings

Ingredients

4Tbsp. water or vegetable broth,

divided

1 yellow onion, small dice

4 garlic cloves, minced

1 pound small yellow potatoes,

unpeeled and cut in half

2 red bell peppers, seeded and cut

into small dice

2 large carrots, peeled, if you want,

and cut into ¼-inch slices

2 celery ribs, cut into ¼-inch slices

1 zucchini, cut in half and then into

¼-inch slices

1 can (28 ounces) chopped tomatoes,

no salt

1 pound brown lentils, picked over for

small stones and rinsed and drained

10 cups vegetable stock

1 5-ounce box baby spinach or 1

bunch kale, washed well and chopped

1 lemon, cut in half

Salt and pepper to taste

Directions
Heat the water or vegetable
stock until bubbly and add
the onions and cook until
translucent 6-8 minutes. Add
the potatoes, red bell peppers,
carrots, celery and zucchini
and cook for 6 minutes or until
the carrots soften.
Add 2 tablespoons more
liquid and add the minced
garlic, stirring for 1 minute.
Add the chopped tomatoes,
rinsed and drained lentils,
and the vegetable stock. Stir
everything together. Bring to
a boil, turn down to a simmer
and cover the pot. Cook for
one hour or until the lentils are
soft and broken down and the
soup is thick and delicious.
Add the chopped spinach or
kale and cook for 4 minutes or
until the greens are wilted. Add
salt and pepper to taste. You
can squeeze a little lemon juice
into each bowl of soup.
