Ingredients

Brownies

4 Tbsp. oil

12 Tbsp. cocoa powder

1 stick + 6 Tbsp. salted butter or

margarine

1¾ cups sugar

4 large eggs (use 3 whole and 1 yolk)

1 cup flour

½ tsp. salt

1 cup walnuts or mini chocolate chips

(optional)

Ganache

1 bag chocolate chips (12 oz.)

8 oz. heavy cream

assorted toppings

Yields: ¼ sheet pan or 9 x 11
cookie sheet

Instructions
Preheat your oven to 350°F
(175°C). Line a 9 x 11 baking
pan or ¼ sheet pan with
parchment paper and spray
with cooking spray.

In a small bowl, combine
the oil and cocoa powder. Set
aside.
Place the butter in a
microwave-safe bowl and heat
for about 30 seconds, or until
melted. Set aside.
In a mixer, combine the sugar
and eggs. Beat on medium
speed until light and fluffy.
Mix the cocoa mixture with
the melted butter until smooth,
then add to the egg mixture.
Beat on medium speed for 2
minutes.
Add flour and salt to the
mixer and blend until just
combined. Avoid overmixing.
Pour the batter into the
prepared pan, leveling it with
a spatula. Bake for 26-30
minutes, until the top begins
to crack. Remove and let cool
completely.
In a microwave-safe bowl,
heat the heavy cream for
about 2 minutes, checking
every 30 seconds to avoid
boiling. Once hot, add the
chocolate chips, ensuring the
cream just covers them. Let
sit for 2 minutes, then stir until
smooth. If needed, heat in
30-second intervals until fully
melted.
Spread the ganache over
the cooled brownies, covering
the surface evenly. Add your
favorite toppings, if desired.
Let the ganache set for 3-4
hours or chill in the refrigerator
for 30 minutes.
Slice and serve these rich,
fudge brownies!
